Deep, dark red colour. Coffee, mocha, chocolate, berry and spicy flavours on the nose. During the harvest the Merlot is riper than the Cabernet Sauvignon and this adds to the complexity and fullness of the wine. The balance between the different components is superb and is followed by a long, satisfying dry finish.

Climate

Warm dry summer with a low ground water level guided the growth season. It seemed as if the vines grew use to high stress levels and accordingly handled the conditions better. The yield was low with a high concentration of colour, flavour and structure.

Hutton, Clovelly

Trellising

4 wire Perold. The vineyard consists of 15000 vines of Cabernet Sauvignon and 5000 vines of Merlot that is all pressed together.

± 5ton/ha

Vinification

Fermented for 5 days in open fermenters at 28șC. The cap was broken and skins pressed trough every two hours. After MLF the wine was aged for 24 months 100% new French Oak barrels.
