The Grapes and Winemaking Berry-selection after harvest ensures that only the best fruit are used. Harvesting is done by hand from selected vineyard blocks in the early hours of the morning. Cabernet and Merlot clones are kept separate throughout vinification. This micro-vinification method results in a blended wine with a layered texture that is complex. Grapes spend 18 days or longer in open top fermentors for maceration. Primary fermentation took place in “Burgundy" (Mercury) and American oak barrels, matured for 12 months, blended and bottled. The Blend is 60% Cabernet and 40% Merlot Not fined and unfiltered, this wine is made to mature and cellar well with 40% naturally fermented. The wines are structured, refined, elegant and ‘European’ in style, rather than ‘New World’. Analysis Alc: 14% Ph: 3.5 Acidity: 5.9 g/l Res. Sugar: 2.3 g/l Tasting Notes Earth and subtle hints of cedar on the nose. Blackberries, red current and cassis fruit all contributing to a juicy middle palate, infused with subtle spicy flavours. The wine is not complex with layered flavours making it a good companion for most food dishes. Will benefit from cellaring. Release Date May 2004 with potential to age for another 5 years+.
