Harvesting is done by hand from selected vineyard blocks in the early hours of the morning, with different Shiraz clones making up this wine. Grapes spend 18 to 21 days or longer in open top fermentors for maceration. Fermentation took place in “Burgundy" (Mercury) barrels and matured for 12 months before blending and bottling. Unfiltered, this wine will mature well. Rhone is what comes to mind, giving the personality of this wine. Tasting Notes Fruit, fruit and more fruit. Hints of cedar with spice complimenting any menu.
